Chef Carl Patton working on one of out 3 grills

These pictures are from the last Phish show in Coventry, VT.  It was an adventure for many people but foodservice was especially challenging.  Our kitchen was a 40' x 40' Screened in tent with an attached 40' x 90' tent.  One the numbers climbed over 1000 people per meal period, it was a feat in itself to keep up.  Our staff numbers raise to 22 on peak days.  We operated for 5 full weeks.  It takes a while to build a city out of nowhere to house 80,000 people.  We needed to have power generators, water trucked in daily, coffee and soda systems installed and refrigerated trucks for walk in coolers.  We set up camp right next to our meal hall using two pop up tents, one R.V. and a few other tents.  Once the rain started to fall it  was tough to keep the mud away.  Luckily we had hot water and our own shower.  Laundry had to be shuttled in from Burlington 2 two hours away.  It was an exciting time and everyone left happy, hoping for another large concert down the road.
